When Francois Payard shuttered his legendary pâtisserie a year or so ago– citing skyrocketing rents– we knew it would only be a matter of time until Payard popped up elsewhere. Much to our delight, a quick spin on West Houston boasts the tres french signage "Francois Payard Bakery". We must admit, the last time we indulged in Payard we were not vegan, so thoughts of delicious macaroons and other pastries are no longer an option. We are happy to note that the new bakery will serve up savory and sweet– and since Payard's fiance Fernanda Capobianco is vegan– we're hoping for at least a few vegan friendly options. We'll keep you posted when FPB opens– mid-August.
To note: Word on the street is Payard's ice cream sandwiches at the discrete FRANCOIS CHOCOLATE BAR at Mauboussin are to die for.
